Description
Meet your favorite new summertime side (or light main dish), perfect for a family weeknight meal, picnic, cookout, or potluck. Cold sesame noodles are a popular New York adaptation from a Sichuan Chinese preparation. This version gets double-sesame flavor from tahini and toasted sesame oil, with additional complexity from peanut butter and hot chili oil. You can make the noodles ahead and enjoy them at room temperature or chilled. Regular linguine is the perfect choice for the pasta, as it stands up to the thick sauce better than thinner dried Chinese noodles. Any leftovers keep in the fridge up to a few days. The recipe, which makes 8 cups, is a Yummly original created by Diana Kuan.
Ingredients
- 1 cucumber
- 2 carrots
- 2 scallions
- fresh ginger (1 small piece)
- 2 cloves garlic
- 12 oz. linguine
- 2 Tbsp. toasted sesame oil
- 3 Tbsp. tahini
- 3 Tbsp. smooth peanut butter (preferably unsalted)
- 3 Tbsp. water
- 2 Tbsp. soy sauce
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. sugar
- 2 tsp. chili oil (optional)
- 1 tsp. extra-virgin olive oil
- 2 tsp. sesame seeds
Directions
- Bring a large pot of water to a boil. Meanwhile, continue with the recipe.
- Slice the unpeeled cucumber on an angle into ovals about 3 inches long and 1/4 inch thick. Stack a few slices at a time and cut them into matchsticks. Peel carrots, then slice into ovals about the same size as the cucumbers and cut into matchsticks. Slice scallions into 1/4-inch thick pieces, separating white stalks and green tops. Peel ginger and grate until you have about 1/2 tsp. Finely chop garlic. Set vegetables aside.
- Cook linguine in boiling water according to package directions until barely tender to bite (al dente). Meanwhile, prepare sauce (Steps 4 and 5). Drain linguine, rinse with cold water, and drain again. Transfer pasta to a large bowl, toss with sesame oil, and set aside.
