- 1 large carrot
- 1/2 cup noodles
- 1 daikon radish
- 1/2 cup noodles
- 1/2 cup sprouts (I used kale sprouts, but broccoli or other green sprouts would work too)
- 1/4 cup scallions (chopped)
- 1 cup cooked chicken (pulled into bite-sized pieces, rotisserie chicken works nicely)
- 2 Tbsp. toasted sesame oil
- 3 Tbsp. tamari (gluten-free soy sauce)
- 2 Tbsp. lime juice
- 2 Tbsp. peanut butter
- 1 Tbsp. honey (or maple syrup)
- 1 Tbsp. fresh ginger (grated)
- 1 clove garlic (pressed or minced)
- 1 sriracha (or more teaspoons, to taste)
