Directions
- Add the beet, tomato juice, celery, and a pinch of salt to a food processor and puree until smooth.
- Place in a bowl covered with plastic. Put in the refrigerator to chill for a couple of hours.
- Serve in martini glasses with a spoonful of cream cheese and sprinkle some parsley on top.
