- 2 lb. potatoes (choice washed well and cut into large chunks, I used sierra red because I love the flecks of red skin in the dish)
- 2 whole garlic (cloves of, peeled, not minced)
- 4 Tbsp. butter (good quality, cubed. Plus more for serving)
- 1 Tbsp. avocado oil
- 1 leek (large, white and light green parts only, sliced thinly)
- 1/2 head cabbage (sliced thinly)
- 3 spring onions (sliced thinly including the green bits)
- salt (to taste)

This is one of my favorite potato recipes. I’ve made it several times now. The last two times I bought the bagged already shredded cabbage with a little carrot in it.

Very good. Used white potatoes, would definitely use red next time and I wouldn’t peel the potatoes.

Love this combination of potatoes onions and cabbage .....tastes great with beef stew or meat loaf or saisages
