Easy. Healthy. Delicious. I only wish we had more crusty bread on hand to sop up the sauce.

This was a nice easy recipe. The potatoes were not able to cook quite well enough for me, but otherwise it tasted good, especially considering the low effort it took.

Really nice and easy to make. I added lots of arugula with the tomatoes that had some color and texture to it.
