- 1 Tbsp. fresh ginger (finely chopped)
- 1 chilli (bird's eye, finely chopped, plus extra sliced red chilli, to serve)
- 180 grams bean sprouts (tails trimmed)
- 4 baby bok choy (pak choy, sliced)
- 2 Tbsp. soy sauce
- 400 grams rice noodles (fresh)
- 50 grams roasted cashew nuts (chopped)
- coriander (cilantro sprigs, to serve)
- 2 whole lemongrass (stems, trimmed, bruised and each tied in a knot)
- 100 mL fish sauce
- 70 grams palm sugar (grated, jaggery)
- 5 cms fresh ginger (piece of, peeled and thinly sliced)
- 3 garlic cloves (bruised)
- 5 kaffir lime leaves (bruised)
- 400 mL coconut milk
- 750 mL chicken stock (approximately)
