  • 1 cup medium grain rice
  • 1 3/4 cups coconut milk
  • 1 teaspoon vanilla paste (or extract)
  • 3 tablespoons sugar
  • 2 cups milk
  • 2 strips lemon peel
  • brown sugar (for sprinkling)

    Directions

    1. Preheat oven to 300°F. Mix rice, coconut milk, vanilla paste and sugar in a shallow ovenproof dish. Mix in milk and add lemon peel. Cook for about 1 hour until the rice has nearly absorbed all the milk, but is still creamy.
    2. Transfer rice to 4-6 ovenproof ramekins, smoothing the top. Sprinkle generously with brown sugar then glaze under a hot broiler. Serve hot or cool before serving.

    Best rice pudding I have ever had. Make sure to use the canned coconut milk as.the solid cream makes it much much richer. Also add a small amount of salt to temper the sweetness and a little whole milk at the end to loosen the mixture up.
