Yummy!;) I added some Sukrin and used classic coconut milk (not light) but it still turned out good. Very tasty.

It turned out perfect. Very mild flavor but delicious. I used only 1 cup of water instead of the 1 1/4 cup

I used Jasmine rice and it turned out mushy too! I even used 1/4 cup less of water. It was also too salty.

Made it in electric pressure cooker, and would possibly try 1/4 cup less liquid, because it was somewhat mushy, but was still delicious with our blackened mahi with pineapple salsa!!! Light coconut flavor

The rice had way too much moisture and turned out pretty mushy. The taste was good though we had it with shrimp coconut curry.

Not many recipes that I don't feel the need to add something to and this is one of them! So good, so easy

I have turned to this recipe so many times. This rice seems to compliment so many meals. Keep a couple cans of coconut milk or cream on hand and you can whip this up whenever! I skip the scallions for a no-frill easy side of rice
