- 1/3 cup honey (use 1/2 cup if you prefer a sweeter cookie)
- 1 cup banana (mashed overripe, about 2 medium)
- 2 eggs
- 2 tsp. vanilla
- 1 cup oats (old fashioned, rolled, certified gluten-free if necessary)
- 1 cup quinoa flakes
- 1/2 cup shredded coconut (I use unsweetened but sweetened may be used)
- 1/4 cup chia seeds
- 2 tsp. baking powder
- 1/2 tsp. kosher salt
- 1/2 cup white chocolate chips (optional)
- 1/2 cup dried cranberries (optional)
