This baked up well for me!
It is a very wet batter, so I appreciated that note in the recipe. The texture is almost coffee-cake like with a large crumb. The flavor is just right and not too sweet. On day two, it held its moisture and might have even tasted better!
I finished this with a quick glaze of powdered sugar, milk, and pineapple rum—which was just right for us! Next time, I’ll add some berries or oranges to the batter for extra flavor. A key lime element would also be delicious!
