Turned out ok but I modified the recipe:
Used 2 1/2 cups of flour, added 2 eggs, used 1/2 cup coconut milk, 1/2 cup grated butter, added vanilla, chopped apricots and pistachios. Dough was wet but turned out ok. Could be flakier.

Very easy recipe and turned out delicious. I used vegan chocolate chips instead of dried fruit. Great for those with allergies to egg and cow’s milk

Delicious! My mum said they were the best scones she'd ever had. Kids wouldn't eat them because of "the bits" (cranberries), but my vegan husband rated them.

I made the coconut scone recipe this morning for our bed and breakfast guests and not thinking poured the entire can (13.5oz) of coconut milk in the recipe. I added more flour and a bit of sugar and added cranberries and chopped pecans to it. I am used to more crumbly dough so I wasn't sure how they would turn out since the dough was more sticky. I used parchment paper and baked at 350 for 20 minutes or until edges were brown. They were moist and slightly fluffy and delicious. I will use again. Thank you.
