Excellent flavor! I added some chives to it to give it a little green. I thought the curry powder would be too much, but after all of the ingredients were put together, it wasn’t too much at all. Next time, I think I would use a little more potato but it’s fine just the way it is

Delicious! I added some cayun pepper to add more spiciness to it. I'd definitely cook it again.

So, so flavorful! My family loved this meal. It was very easy to make. I used the Thai kitchen curry paste that I mixed half green and half red. I also used a can and a half of coconut milk because I already had the half can open and didn’t want it to go to waste. Even with that my husband wished there had been more “soup” to the dish. This recipe is a definite keeper.

Great recipe for anyone who wants to eat healthy on a dime. You should be able to make a big batch and some rice to pair with it for under $10. Plus, it’s simple enough to make without much effort.
