- 1 cup white rice (uncooked arborio)
- 2 2/3 cups lite coconut milk (canned, a little less than two 14.5oz cans)
- 1 1/3 cups coconut water
- 1/2 cup raw turbinado sugar
- 1 vanilla bean (split lengthwise and scraped)
- 1/2 tsp. pure vanilla extract (I use Rodelle Organics Vanilla Extract)
- 1/4 tsp. kosher salt
- 1 Tbsp. matcha (high-quality, I use Encha organic latte grade matcha, plus more to taste)
- 1/2 cup coconut cream (canned)
- 1/2 cup adzuki beans
- 1/2 cup pitted dates (finely chopped, I used medjool dates)
