I was pleased with the flavor of these zucchini muffins. I used 1/2 c. Splenda instead of Swerve added 1/4 tsp of powdered Stevia, as some reviewers said they weren't sweet enough. I didn't have walnuts, so added a couple of tablespoons of cocao nibs. I couldn't really taste the nibs, but it added a nice texture. I had about 1/4 c. of grated carrots from another baking recipe, so threw that in. The remaining muffins are tucked away in the freezer for a special treat--30 seconds in the microwave is all they need.

I love these muffins. This is my 2nd time making these. I used 1 Tbsp Cinnamon and 1 1/2 tsp Pumpkin Pie Spice. Be careful not to eat too many at once...the Swerve can cause stomach upset.
