I read the reviews after mixing the batter, but before putting in the last part. After reading them, I stirred in a tsp of baking soda and 3/4 cup of milk, to get a runny dough that could be poured into the lead pan and hopefully would rise a little. I also used the recommended honey.
With these notifications, I got a 4-star loaf. It was very moist - actually a little too moist, IMO. I may cut the butter next time. After cooling, it was very sliceable. The texture bordered on cake, but held together fairly well.
Flavor was distinctly coconut, but not overwhelmingly so. My family didn't find it eggy, but we also like eggy flavors and might not pay them much mind.
My husband liked it, but also now wants me to make a rum coconut cake that is similar to it.

Very dense and did not raise, not very sweet as i didn't add honey.
Looks exactly like the picture though.
