- 1/2 cup white rice flour (sweet, preferably Koda Farms or Bob’s Red Mill)
- 1/2 cup coconut flour (preferably Bob’s Red Mill)
- 1/2 cup millet flour (preferably Bob’s Red Mill)
- 2 Tbsp. tapioca flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. fine sea salt (increase to ½ teaspoon if using unsalted butter)
- 1/2 cup yogurt (plain dairy-free, I use Forager Cashew Yogurt)
- 1/2 cup milk (plant, I use fresh almond milk)
- 8 Tbsp. vegan butter (salted, I use Miyoko’s Creamery Cultured Vegan Butter, at room temperature, or salted or unsalted dairy butter)
- 1/2 cup light brown sugar (packed organic)
- 3 large eggs (separated)
- 1 tsp. vanilla extract
- 1 cup bananas (mashed ripe, from about 2 large bananas, 240 g out of the peel)
- 2 Tbsp. organic granulated sugar
- 1/2 cup coconut milk (well-shaken full-fat canned)
- 5 oz. bittersweet chocolate (60-70% cacao mass, finely chopped, about 1 cup)
- 1 Tbsp. dark rum (such as Meyer’s or The Kraken)
- 1/8 tsp. fine sea salt
