- 1 Tbsp. avocado oil (or coconut oil or olive oil)

This was good, I’ll do this again and will add more spices to complement the curry.

I tweaked this a bit. Before adding the fish it needed something. So I Added 2 TB brown sugar and 1 TB corn starch to thicken. Also, I Chunked the fish (a combination of salmon and halibut) and did not pre cook. I added it raw, right before serving and only cooked it for 2 minutes in the sauce then put the lid on, removed it from the heat and let it finished cooking befor serving over coconut rice. My family, enjoyed it and we will add it to the rotation

I made this for dinner tonight. It was simple to make and exotic in taste.
The sauce simmers for about ten minutes before adding the fish. I think the sauce could be made ahead
Of time and then reheated and the fish added for a simple dinner party event. I like meals I can prepare
Ahead and then just finish off after guests arrive. I recommend this for a tasty and simple dinner, and it is
Special enough to serve guests.
