- 2 limes (Juice of 2 limes)
- 1 red chilli (chopped)
- 1 piece ginger (thumb-sized)
- 2 garlic cloves

- 1/2 maple syrup
- handfuls fresh coriander (big handful)
- 400 mL reduced fat coconut milk (1 can– or you can use full fat coconut milk)
- 300 mL vegetable stock
- 1 tsp. turmeric powder
- 235 grams pak choi
- 175 grams sweetcorn (baby)
- 260 grams noodles (edamame, – cooked according to pack instructions)
