- 3 cups yellow onion (thick-sliced, approximately 1 large onion -- see image in instructions)
- 3 Tbsp. minced garlic (freshly, approximately 8 small-medium cloves)
- 1 1/2 Tbsp. fresh ginger (pulp, from approximately 2 X 1½-inch ginger root -- see image in instructions)
- 2 tsp. chile pepper (finely minced Thai, or other hot pepper -- see notes)
- 2 tsp. brown sugar
- 2 tsp. ground cumin
- 1 1/2 tsp. ground cardamom
- 1 1/2 tsp. ground turmeric
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 3 cups coconut milk
- 1 cup vegetable stock
- 1 1/2 cups fresh tomatoes (diced)
- 24 basil leaves (washed and dried)

- 3 jalapeño (thin red or green, slices for garnish, optional)
