This was a very easy pound cake to make and delicious for coconut lovers. I was concerned with the amount of sugar so I only put in 1/2 a cup of sugar in the batter. I also think that you could easily substitute coconut oil for the butter (in the batter only) if you wanted even more coconut flavor.
