- 2 eggs
- 3/4 cup sugar
- 1/3 cup corn starch
- 1/4 tsp. salt
- 1 cup flaked coconut (toasted)
- 1 tsp. coconut (or vanilla extract)
- 1 pie shell (9 inch, baked, see above for our pie crust recipes)
- 1 whipping cream (small carton, the kind you have to whip yourself, not the pre-made, frozen stuff!)
- 1/2 cup powdered sugar (to taste)
- 1 tsp. coconut extract

Very good my son loves this pie. I used a toasted coconut/almond milk blend. And add a little more shredded coconut. ❤️

This was absolutely delicious! The only change I made was that I put the whole can of coconut milk in it. Everyone wanted more!

Was good but the custard really gave me a hard time, didn’t boil and took at least 45 minutes to get to pudding-ish consistency. Delicious but I think that I need to whisk the eggs before just adding them to the mixture

This was my first coconut cream pie. it turned out wonderful!!!definatly making this again..I.even used half Crisco and half coconut oil for crust..next time I will try all coconut! :-) also didnt have coconut extract..vAnilla was just fine...Hands down best coonut cream pie ever!
