- 3/4 cup unsalted peanuts
- 1/2 cup shelled pistachios
- 1 head cauliflower (medium-to-large, color of choice, trimmed)
- 1/2 cup lime juice (combination, I used variegated pink lemons)
- 2 Tbsp. peanut oil (roasted, or flavorful oil of choice)
- 2 Tbsp. pistachio oil (roasted, or flavorful oil of choice)
- 1/2 tsp. Maldon Sea Salt Flakes (to taste, use less if finer)
- 1 tsp. aleppo
- 1/2 tsp. red pepper flakes
- 1 tsp. ground sumac
- 1 cup fresh cilantro (packed, minced, use parsley if not a fan)
- 2 large scallions (thinly cut)
