- fresh blueberries (a punnet of)
- icing sugar (to dust)
- 1/3 cup coconut chips (toasted)
- 4 peaches (ripe, quartered)
- 3 Tbsp. melted butter (or olive oil)
- 1 tsp. vanilla extract
- 2 Tbsp. brown sugar
- 1 cup caster sugar
- 190 mL coconut cream (just over ¾ cup)
- 1/2 tsp. salt
- 1 tsp. vanilla
