- 2 heads lettuce (spring, or butter lettuce, chopped into bite sized pieces)
- 1/2 bag baby carrots (sliced in half)
- 2 stalks celery (sliced)
- 4 red pepper (mini or 1 large)
- 1 cucumber (sliced)
- 1 pt. grape tomatoes
- 4 white mushrooms (sliced)
- 3 hard boiled eggs (sliced)
- 1/2 block cheddar cheese (cut into chunks)
- 3 slices bacon (cut into bite sized pieces-I used thick uncured applewood smoked bacon)
- croutons (A handful homemade, recipe below)
- catalina dressing (recipe below)
- 1 loaf french bread (cut into cubes)
- 1/4 cup olive oil
- 2 tsp. italian seasoning
- 1/2 tsp. ground black pepper (fresh)
- 1/2 tsp. salt (optional)
- 1 tsp. garlic powder
- 1/4 cup onion (finely chopped-for this salad I leave the onions coarsely chopped because I enjoy the extra sweet, crunchy onion bite.)
- 1/4 cup red wine vinegar
- 1/4 cup ketchup
- 1/4 cup light brown sugar
- 1/4 tsp. worcestershire sauce
- 1/2 tsp. paprika
- salt
- pepper
- 1/2 cup canola oil
