Description
The clementine we know today traces its origins back to Algeria in the first half of the twentieth century. It is debated who originally developed the clementine, but folk legends have attributed great healing powers to the clementine, suggesting that it might even be able to fight food poisoning and related illnesses to food. We are making no great claims here, other than that you will fall in love with this sweet Clementine Cake. Flavored with vanilla bean and clementine juice, this cake is sweetened with raw sugar and honey for a healthier dairy free dessert option.
Ingredients
- 150 grams flour
- 100 grams barley flour
- 50 grams potato starch
- 100 grams acacia honey
- 60 grams raw sugar
- 60 grams raw sugar
- 3 clementines (juice and pulp)
- 120 grams vegetable oil
- 3 eggs
- 2 tsp. baking powder
- 1 vanilla bean (or 2 tsp. vanilla extract)
Directions
- Preheat the oven to 170C.
- Peel the clementines, cut them into wedges and put them in a food processor to puree.
- Beat the eggs with the sugar and the honey until light and foamy, add the oil, the vanilla seeds and the clementine puree.
