Solid crockpot recipe. I added some cumin, chili powder, and paprika as I only had plain diced tomatoes (not fire roasted) on hand and wanted to amp up the flavor.

So easy to make. Great as is or in a flour tortilla. Reduced wateriness by also straining diced tomatoes & adding 1/4 cup rice 30 min before eating. Perfect consensientcy. Added flavor by adding Siracha sauce & diced pickeled jalapenos to desired taste at end. Important to always salt & pepper chicken before cooking. Added more salt & pepper to chicken after shredding.
Freezes & reheats well for a quick meal over rice.
This is so good that I keep a stock of frozen single servings for a quick lunch over rice. Eat it every week!

Cooked in my pressure cooker. I used a pork taco seasoning packet for the flavors, it was delicious.

Came out delicious! I put half the diced tomato it called for and instead put a little pasta sauce and it came out great. Definitely making this again!

Loved it!! Perfect!! Used all organic ingredients and a southwestern salsa, smoked canned tomatoes, and southwestern seasoned canned corn. Flavor and texture is absolutely perfect to eat as is ✨

I read the comments and decided to tweak the recipe a bit. Turned out AMAZING!! I added chicken broth, cut up onion, 1 Taco Bell taco seasoning, some more of my own seasoning and it is soooooo delicious!! Great with tortilla chips.

The recipe as it stands is bland and watery but the base ingredients make a nice foundation if you jazz it up a bit. I added a packet of McCormick chicken taco seasoning and a half cup of quinoa. Did the trick and goes great with plain Greek yogurt and tortilla chips.

I thought this was really tasty but a wee bit watery - I added a handful of quinoa and it thickened up super nicely! Also, I recommend adding some Valentina hot sauce

Super easy, but very bland and a bit too “wet” for tacos. Next time, I’ll add taco seasoning and reduce the corn by half.

I would definitely remake but I would use maybe half of the corn. I also diced a tomato and two bell peppers that I added into it as well.

Added taco seasoning. Was very soupy, so make sure you drain it if you’re serving with tortillas

With seasoning, it was pretty good. Even on 5 hours, my chicken was a little mushy. I’d check it around 4-4.5 hrs if you have a newer Crockpot.

I feel bad giving this five stars because I changed a lot, so I don’t think I’m really reviewing this recipe. After reading reviews this was bland, I added a homemade taco seasoning to the chicken thighs (personal preference) before I did anything. I also added diced onion on top of the tomatoes and salsa. I also served with cheese and guacamole on top. We weren’t really sure how to eat this. One person voted it bad for tortillas because this made the tortillas super soggy. I ate it kind of like soup. It would be hard to call it soup because there wasn’t enough liquid to it. Another ate it with tortilla chips and said it went well that way. I may have to try this with rice. In any event, this was good and will be made again.

Very Good! I seasoned the chicken when in put it in the crock pot and added onions, then the rest of the of ingredients. I will be making this again.

Turned out good! I would suggest adding a whole chopped onion, 4 garlic cloves, paprika, salt, chili powder...

So easy and everyone loved it. I added garlic salt, cumin, and black pepper when it was done cooking. I served it with yellow rice, chips, salsa, and guacamole.
