I really liked it! The flavor was great, and it was easy to make. I broke my wrist and it’s my right hand, so there aren’t as many things I can make right now. I used my mini chopper to chop onions and garlic and sautéed them before adding the rest of the ingredients. I used an alternative plant-based milk because that’s what I had on hand and it tasted fantastic. I am excited to try the coconut milk another time as I enjoy that flavor with curry. I roasted Pepitos and grated some fresh cheese for toppings.
