- 3 bananas (medium spotty)
- 1 cup spelt flour
- 1/2 cup cacao powder
- 1 tsp. baking powder
- 1/2 cup coconut oil (melted)
- 1/4 cup milk (I used Provamel coconut and rice milk)
- 1 egg (chia, 1 tbsp chia seeds + 3 tbsp water)
- 1/2 cup cocoa (nibs, or you could use dark chocolate sugar, but watch the sugar)
- 1 pinch sugar
- 1 Tbsp. liquid sweetener (if you prefer something a bit more sweet, honey, maple syrup or date syrup)

I love spelt flour so am always excited to see recipes made for it. I have a sensitivity to coconut (sigh) so had to adjust for that and need to use less oil next time. The loaf is beautiful, texture wonderful. The taste is a little off. I will omit maple syrup and maybe try honey. Fun! Thank you!
