    I did parboil the potatoes because I live at high altitude and it takes longer for food to cook. The recipe turned out great and was perfect amount for 2 people with leftovers for the next day. I think I will add panko bread crumbs on top next time for extra crunch.

    Great I however used non fat 1/2 and 1/2 and I did not parboil potatoes instead I doubled recipe and cooked at 375 for 1 hour 30 minutes covered in foil
