- 1 medium onion (small/, diced)
- 2 medium carrots (peeled and diced)
- 3 cups green beans (frozen organic, cut into bite-sized pieces, fresh works too if it is in season!)
- 1 medium potato (cubed)
- 6 oz. mushrooms (sliced)
- 1 cup corn (frozen organic)
- 4 cloves garlic (minced)
- 2 Tbsp. tomato paste
- 15 oz. diced tomatoes (drained, if tomatoes are season, use fresh!)
- 2 qt. bone broth (You can use Instant Pot Broth, or here is my slow cooker method)
- 2 baby spinach (big handfuls of, or baby kale)
