Description
A simple and delicious chili made with meat, beans, and just-right seasonings is the perfect way to feed a crowd. This one gets bonus points because it leans on panty staples, making it a handy option for a weekday family dinner. Chili freezes well, so do yourself a favor and double the recipe and freeze half for later. We’ve topped the chili with avocado and sour cream for a little richness, but shredded cheddar cheese and tortilla chips also make nice accompaniments. The recipe, which makes 8 cups, is a Yummly original created by Kate McMillan.
Ingredients
- 1 small yellow onion
- 1 red bell pepper (medium)
- 2 cloves garlic
- 2 Tbsp. extra virgin olive oil
- 1 1/2 lb. ground turkey (a mix of light and dark meat)
- 2 Tbsp. chili powder (or 3 Tbsp. for extra flavor)
- 1 Tbsp. ground cumin
- 2 tsp. salt
- 3/4 tsp. dried oregano
- 15 oz. pinto beans (1 can; or black beans)
- 29 oz. fire roasted crushed tomatoes (2- 14.5 oz. cans; or use diced tomatoes)
- 1 cup reduced sodium chicken broth
- 1 avocado
- 1/2 cup fresh cilantro (coarsely chopped, plus sprigs for serving)
- 6 Tbsp. sour cream
Directions
- Chop onion and pepper and mince garlic. Warm olive oil in a large pot such as a Dutch oven over medium-high heat. Add vegetables and cook, stirring often, until soft, about 6 minutes.
- Add ground turkey and use a wooden spoon to break up the meat. Cook, stirring often, until turkey is browned all over, 7-8 minutes.
- Add 2 Tbsp. chili powder, the cumin, salt, and oregano and stir to combine. Cook, stirring, until spices smell toasty, about 3 minutes.
