These have become a monthly routine for my sourdough discard. I add 2 tsp. vanilla to sweeten a bit. Best waffles and pancakes ever. Thank you for a a tasty way to use discard.

05-01-2020. Best waffles to date. Crisp, light and fluffy. Used discard from sourdough starter, prepare batter the day before. Left at Rome temperature for about 8 hrs and popped in the fridge. Removed from the fridge 2 hrs before cooking the waffles. Added vanilla and some lemon rind , scattered blueberries over the batter

Wow. Best waffles I've ever made. Worth the prep, and actually not so much prep if you're already cultivating sourdough, it's a really great way to use your discarded starter.
