- 1 Tbsp. Better Than Bouillon Chicken Base
- 1 bay leaf
- 6 Tbsp. butter
- 2 celery (small ribs, sliced, with the leaves,, 1 cup)
- 1 baby carrots (slightly rounded cup sliced sweet)
- 1 onion (small, chopped)
- 1 cubanelle pepper (or medium-sized sweet red bell, diced small)
- 8 oz. sliced mushrooms (fresh, snap large slices in half)
- 1/4 tsp. dried thyme (*crush between fingers when adding to release flavor)
- 1/4 tsp. coarse ground black pepper (*or to taste)
- 1/3 cup flour
- 1 cup heavy cream
- 2 Tbsp. white wine (light, such as Chardonnay)
- 1 1/2 lb. roast turkey (or 2½ - 3 cups/whatever you have on hand leftover, or chicken, pulled or large diced)
- 1/2 cup peas (frozen sweet baby, unthawed)
- 1/4 tsp. salt (regular, or to your taste for saltiness)
