Description
There may not be a British meat pie more iconic than the pork pie. Pork and pork jelly set in a simple hot water crust—timeless, classic and elegant. Served cold as either a snack or as part of a meal, this hearty pie is a bit like a pâté en croûte, but more British. And if you've never had one, it is well worth the time to make it.
Ingredients

- 1 pork trotter (with hock attached)
- 2 bay leaves
- 3 carrots (coarsely chopped)
- 1 onion (halved)
- 6 peppercorns
- kosher salt
- 1 lb. ham steak (cut into 1 inch cubes)
- 1 1/2 lb. ground pork
- 1/4 tsp. ground allspice
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. marmite
- 3 cups all-purpose flour
- 9 oz. lard (see note)
- 6 Tbsp. milk
- 6 Tbsp. water
- 1 egg (beaten)
