- 1 cup caster sugar
- 6 eggs
- 4 Tbsp. grated lemon rind (finely)
- 3 lemons
- 300 mL cream (thickened)
- 1 tart (prebaked 28cm, case)
- icing sugar (to dust)

Directions
- Preheat oven to 170c.
- In a large bowl, whisk together sugar and eggs until well combined, then add lemon rind and juice. Stir in cream. Place pastry case on a baking tray and ladle lemon mixture into case.
- Bake for 25 minutes or until mixture is just set and still a little wobbly in the centre.
- Remove from oven and allow to cool completely. Dust with icing sugar to serve.
