I made this for just me . 1 egg yolk, 1 Tbsp butter and about 1/8-1/4 cup lemon juice with a bit of water , salt and pepper. It worked out fine , a bit tart. I had to wisk constantly as it was such a small amount . I calculated 155 calories on my fitness pal .
