Description
Mastering the perfect moist, fluffy omelet takes a little practice, but once you have the basics — as in this classic ham and cheese combo — it’s a fantastic recipe to have in your everyday repertoire. Then you can whip out more omelets (and customize them if you like) for additional diners. For the best results, use an 8-inch nonstick pan with plenty of butter — and cook over medium-low heat so the eggs have time to cook all the way through without overcooking on the bottom. Instead of ham, feel free to swap in sauteed mushrooms or spinach. And if you have fresh herbs like basil or dill, by all means include them as well! Ingredients
- 3 large eggs
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1 Tbsp. unsalted butter
- 1/4 cup diced ham
- 1/4 cup shredded cheddar cheese (mild to sharp cheddar)
- chopped chives (or green onions; optional)
- 1/4 avocado (optional)
Directions
- In a small bowl, whisk eggs to blend with salt and pepper.
- Melt butter in an 8-inch nonstick frying pan over medium-low heat and swirl to coat bottom of pan. Pour eggs into the pan and, using a rubber spatula, stir constantly until eggs start to thicken, about 30 seconds.
- Allow eggs to cook undisturbed until they begin to set, 1-2 minutes. Then, using the rubber spatula, lift up the edges of the omelet while tilting the pan, allowing the uncooked egg to flow to the bottom of the pan. Repeat until the egg no longer flows.
- Once the omelet is mostly cooked through (it will continue to cook once you fold it over), sprinkle ham and cheese over the top. Loosen the omelet underneath and then fold the omelet in half. Cook until cheese melts, about 2 more minutes.
- Loosen the omelet again underneath, gently slide it onto a plate, and sprinkle with chives, if you like. Slice avocado, if you’re using it, and serve it with the omelet.
