- 2 cups half and half (or whole milk)
- 1/2 cup granulated sugar
- 1 pinch table salt
- 5 large egg yolks (chalazae removed, see note)
- 3 Tbsp. cornstarch
- 4 Tbsp. unsalted butter (cold, cut into 4 pieces)
- 1 1/2 tsp. vanilla extract
- 1 large egg yolk
- 1 Tbsp. heavy cream (with 1-2 tablespoons additional, as needed)
- 1/2 tsp. vanilla extract
- 1 1/4 cups all purpose flour (6 1/4 ounces)
- 2/3 cup confectioners' sugar (about 3 ounces)
- 1/4 tsp. table salt
- 8 Tbsp. butter (1 stick, very cold, cut into 1/2-inch cubes)
- 2 kiwis (large, peeled, halved and cut into half-moon slices, my kiwis were teensy tiny so I just left them in circles)
- 1 pt. raspberries (blemished berries discarded)
- 1/2 pt. blueberries (sorted, discarding any stems or blemished berries)
- 1/2 cup apple jelly
