I used 2 Roma tomatoes, diced, with fresh basil from our garden. After adding shredded Parmesan cheese to the top of the tomato mixture, I threw them under the broiler for a minute to melt the cheese. Before plating them up, I shredded a little extra Parmesan cheese to the top. My wife loved them!
