- 2 Tbsp. olive oil (divided)
- 8 oz. button mushrooms (sliced)
- 1 1/2 lb. chuck roast (or beef for stew, cut into 1/2" dice)
- 2 stalks celery (1/2" dice)
- 1 medium onion (chopped)
- 3 parsnips (medium, 1/2" dice)
- 3 medium carrots (peeled and cut into bite sized 1/2" coins)
- 1 clove garlic (minced)
- 1/2 tsp. dried oregano
- 15 oz. diced tomatoes in juice
- 1/2 tsp. dried basil
- 1 bay leaf
- 8 cups low sodium beef broth (or stock preferably homemade, recipe on this site)
- 4 cups kale (tough stems removed, chopped)
- 3/4 cup pearl barley (whole, Can substitute farro, but check cooking times -- it may be less than pearl barley. Note if using quick cook barley, you can reduce the cooking time to fit, by simmering the beef soup for 20 minutes, then adding quick cook barley and kale at the same time for an additional 10-15 minutes to simmer.)
- 1 beef bouillon cube (for extra depth optional - DO NOT USE WITH REGULAR BEEF BROTH, ONLY LOW SODIUM.)

This soup is so delicious and healthy and a very stick to ribs kind of meal. Definitely a keeper for the winter months ahead

Delicious!! Spoonful of veggies with every bite. Served it with homemade rosemary crusty bread with olive oil.

Great recipe! In addition to the ingredients I made a couple of modifications to this soup and boy did it pop! I dusted the beef cubes with a mixture of flour and fajita seasoning and browned the meat, added some black beans and French lentils, and used tender baby kale... loved it!

This recipe is everything I love about homemade soups, fresh and wholesome! I appreciate that the recipe could be adjusted to fit anyone's budget. However, I certainly wouldn't change a thing. Every spoonful was worth it!!

Some folks just have to complain, Have you ever thought of recipes as a starter idea? If you think this is to expensive, your on the wrong page, just a thought !
