Oh my goodness. This really is amazing. Followed the recipe to a t, and it was perfect. And it somehow tastes better on day 2!! This is my first time making a completely vegan meal like this, and I’m astounded at how good it is.

I am a self-described connoisseur of baked mac. After many iterations of both vegan and dairy baked mac & cheese, my wife has declared that this is my best yet. The sauce is, as the recipe warns, VERY hands-on. But the sauce is well worth the effort. Make the sauce in a sizable pot, no less than 3-qt.

This is a great substitute to having baked Mac and cheese the vegan way. Enjoyed it a lot more day two than day one. It was less saucy day two than day one (which I prefer) and the seasoning flavors the dish really well. I’ll probably up the pasta amount when I make it again so it won’t be so saucy (or more flour). I like mine more stiff and pie like.
The whole tray was gone by the end of day two, and that was just between two people 😊. I used Ezekiel bread for bread crumbs and worked perfectly, gave it a nice crunch.
