- 1 cup water
- 4 slices thick cut bacon (chopped small)
- 1 Spanish onion (large, chopped small)
- 2 red potatoes (large, peeled, cut into ¼” dice)
- 2 cups kale (thinly sliced lacinato, dino, center rib removed before slicing)
- 1 bay leaf
- 1/4 tsp. dried thyme
- 8 oz. halibut filet (cut into 3/4-inch pieces)
- 1/2 cup heavy cream (to taste)
- 1/2 cup Collagen (powder, optional, I used Bulletproof brand Upgraded Collagen)
- 2 Tbsp. minced fresh parsley
