- 1 dried ancho chile (or 1/2 dried guajillo chile)

- 6 limes (cut in half)
- 1 Tbsp. fennel seeds
- 1 tsp. black peppercorns
- 1 tsp. red chili flakes
- 10 lb. ducks (giblets and neck removed, well rinsed and patted dry)
- glaze (tea, recipe follows)
- 2 cups light corn syrup
- 1 cup dark corn syrup
- 1 cup white vinegar
- 1/2 cup sugar
- 1/2 cup fresh orange juice
- 1/4 cup honey
- 1/4 cup fresh lime juice
- 2 Tbsp. fresh lemon juice
- 2 inches cinnamon stick (piece)
- 2 tsp. coriander seeds
- 1/2 tsp. fennel seeds
- 3 tea bags
