- 2 Tbsp. fresh orange juice
- 1 tsp. vanilla extract
- 1 tsp. orange blossom water
- 1 Orange (zest of)
- 1 lemon (zest of)

- 1/2 cup caster sugar
- 4 Tbsp. cornflour (cornstarch)
- 2 Tbsp. unsalted butter
- 2 tsp. orange blossom water
- 1 drop orange food colouring (optional)

- 6 gelatine leaves (titanium strength, or 8 platinum)
- 2 cups blood orange juice (strained, I used store-bough juice)
- 150 grams caster sugar (| 5½oz)
- 1 cup dessert wine

- 10 floz cream (double, heavy)
- 150 grams icing sugar (| 5½oz)
- 2 tsp. orange blossom water

- 4 floz orange juice (strained)

- 4 Tbsp. orange liqueur (such as Cointreau or Grand Marnier)
- 3 oranges
- 1 grapefruit (ruby)
- 3 Tbsp. flaked almonds
