This is so easy and so delicious! We used Sockeye Salmon and it turned out perfect! I started it Friday night for a Sunday breakfast that was out of this world... then shared it for Christmas Eve. A little trick I picked up.... wrap the fish in cheesecloth first then you don’t have to rinse the cure off the fish and lose any fish.
