Turned out wonderful! Added some fresh cilantro to the brine, and everything else to the letter.... I diced up some mango, nectarine, mandarin orange, pineapple, purple onion, the juice of a lime, cilantro, salt and pepper to make a “chutney” and laid the meat over cilantro lime rice. Sided w Brussel Sprouts! Awesome!!!!!
