- 3 cassia bark (″ length of, a cinnamon stick works too, broken up with a hammer)

- 1/2 seeds (jalepeno, removed minced)
- 6 leaves perilla (Vietnamese, Japanese red shiso also works, cut into a chiffonade)
- 3 stalks cilantro (minced, about 1 tablespoon)
- 1 clove garlic (minced)
- 1/4 cup chive (garlic, chopped)
- 2 Tbsp. lime juice (from 1-2 limes)
- 2 Tbsp. fish sauce
