- 2 tsp. kosher salt
- 1 1/2 tsp. ground cumin
- 3/4 tsp. crushed red pepper flakes
- 2 lb. boneless chicken thighs (skinless, cut into 1 1/2-inch cubes, see note)
- 1 red bell pepper (large, stemmed, seeded, and cut into 1 1/2-inch pieces)
- 1 green bell pepper (large, stemmed, seeded, and cut into 1 1/2-inch pieces)
- 1 white onion (large, cut into 1 1/2-inch cubes and separated into 3-layer segments)
- water (Wooden skewers, soaked in, for at least 30 minutes prior to use)
