Used as a side dish for Cinco de Mao theme dinner. Five diners took small initial serving; no seconds.

LOVED this! And so easy. Added a smidge more lime juice and salt. This is the first rice dish our son actually wanted to eat. This is a definite keeper!

Maybe a little less lime juice, more salt, and don’t skimp on the cilantro (I had to, not enough). Was really delicious.
