This easy and refreshing rice pairs well with many Latin foods whether served as a side dish or rolled into a wrap.
Ingredients

- 2 Mazola® Sobrecitos™ Chicken Flavor Bouillon Packets
- 4 tsp. Mazola® Chicken Flavor Bouillon Powder
- 1/2 tsp. sazon seasoning with annato (sazon con achiote, optional)
- 2 cups hot water
- 1 Tbsp. Mazola Corn Oil
- 1 cup long-grain rice (rinsed and drained*)
- 1/4 cup diced onion
- 3/4 cup red bell pepper (diced)
- 1 1/4 cups frozen corn (fresh OR)
- 1 tsp. minced garlic
- 3 Tbsp. lime juice
- 3 Tbsp. fresh cilantro (minced)

Directions
- Combine bouillon, sazon (if desired) and hot water; stir to dissolve and set aside.
- Heat oil in a large deep sided skillet over medium-high heat. Add rice and cook for 2 to 3 minutes or until the rice begins to turn slightly golden in color. Add onion, peppers, corn and garlic; stir to combine and cook for 2 minutes.
- Add prepared broth and lime juice to rice and bring to a boil. Cover; reduce heat to low and simmer for 18 to 20 minutes or until liquid is almost absorbed. Cover and remove from heat for 3 to 5 minutes. Fluff rice with a fork and stir in cilantro. Garnish with fresh lime peel or lime slices, if desired. (Rice may also be cooked in a rice cooker.)
- If using enriched rice, do not rinse.
